KENNEWICK — Brianna Rose Monson wasn’t known for being an expert cook. When the Kennewick woman got married several years ago, some of her cousins jokingly gave her recipes for Jell-O. But she’s since mastered everything from meatloaf to snickerdoodles — and she’s done it without relying on staples such as eggs, milk, wheat and nuts.

Grilla Bites Gets Reviews
We rode the Centennial Trail from Arlington to Snohomish and found this place in town. This place is very organic and green. We both ordered the bison burger. You can choose chips or vegetables with your bison burger and we ordered one of each. The burger was really large, very tasty and the sides were fresh and served with what must be home made hummis. We will return.
This place was a perfect find on a long bike ride. A group of us rode from Redmond up to Snohomish and stopped at Grilla Bites. This was our halfway mark for our 100 mile bike ride. Hit the spot. They even had PBJ on the menu, which for some is their ideal meal on a bike ride. Or, some of us opted for the Bison burger or Turkey Cranberry. I will be back, on bike or via car. This place really is as good as it gets! There are some great lunch choices here, including soup, sandwiches, and one of the best salad bars this side of the Mississippi. They feature all locally grown and organic ingredients. Plus there is delicious made-to-order juices! Go there on Sunday for a great brunch (after 10am) and superb coffee. First in Snohomish to Compost Food Scraps

Grilla Bites was the first restaurant in Snohomish to adopt commercial composting for all customer food scraps, compostable paper (anything not waxy), and kitchen scraps.

Environmentally Simulating Surroundings
The already progressive town of Snohomish, WA just got a little more inviting due to the addition of Grilla Bites, the organic franchise that has gained a reputation for itself in both California and Oregon. The Snohomish location is owned by Anne Dottai, a Bastyr University graduate and long time nutritionist. Anne opened Grilla Bites so that she could work in an environment more sustaining and reach a broader spectrum of people with quality ingredients that promote positive health for humans and the environment simultaneously.
Her benches are salvaged church pews and the beautiful fir bead board you see lining her organic salad bar are also a Second Use find. Anne has taken the “green” concept beyond what even the most environmentally friendly business has. She uses an energy- efficient water heater, biodegradable utensils, and all locally grown produce. click here to read more
Have a Food Intolerance?

Anne’s background in nutrition and compassion for the growing numbers of people with food intolerances, such as dairy and gluten, make her strive to bring a variety of quality, tasty choices to the menu so that almost anyone can find a number of great things to try. She also has amazing vegan, gluten free cookies from the Flying Apron of Fremont that fly off the shelf daily. All sandwiches and burgers are served on fresh baked organic breads and buns from the Snohomish bakery, but Anne does offer both gluten free breads and buns when needed.
Anne knows this is not the most favorable economic climate, to put it mildly, to be starting a new restaurant, but the gratefulness she receives from the community and visitors on a daily basis helps her keep the faith that Grilla Bites of Snohomish is meant to be. Anne enjoys being a part of the community and looks forward to developing lasting relationships with its members.

Just 2 Years to Open the Doors
With the help of Mosaic Architecture of Snohomish, the planning began and construction finally started on November 27th, 2007. Anne took great care to make the construction process environmentally friendly as well as sustainable. She used eco-friendly paints, recyclable carpet, found salvaged building materials and old church pews at Seattle Second Use, frequented JG Murphy auctions where she bought lamps, chairs, and many restaurant supplies. Many of Anne’s friends and friends of friends put in long hard hours helping bring it all together. Just about two years after the seed was planted, Washington’s first Grilla Bites opened in Snohomish on March 13th, 2008.
